Recipe

Kikomando is a Ugandan street food made with beans and chapati. This quick adaptation uses canned beans and ready-made chapati.

Keep the beans moist so the flatbread can soak up some of the sauce.

    Prepare and serve

    1. Prepare the tomato base

Drain and rinse the beans and finely chop the tomatoes. Heat the oil in a wide pan over medium heat. If using onion, finely chop it and soften it in the oil for 3–4 minutes. Add the tomatoes and cook for about 5–6 minutes until soft and juicy.

    2. Add the beans and season

Stir in the salt and black pepper, plus the optional curry powder or chilli. Add the beans and water and simmer gently for about 5 minutes. Mash a few spoonfuls of beans and cook for another 2–3 minutes until the sauce is thick but juicy. Add a little water if needed.
