Recipe

These are deliberately simple cheese quesadillas: small wheat-flour tortillas, grated Cheddar and a little melted butter for the non-stick pan. Nothing else is added to the filling.

      For each quesadilla, distribute about 40 g of Cheddar over one small tortilla and cover it with a second tortilla.

    Cook and cut

    1. Heat and lightly brush the pan

      Heat a large non-stick frying pan over medium heat, about 5 on a 9-level hob. Lightly brush the pan with the melted butter; do not brush the tortillas.

      Cook the quesadillas until the underside is golden and the cheese begins to melt, about 2–3 minutes. Turn carefully and cook the other side until golden and the cheese is fully melted, about 1–2 minutes. Adjust for actual browning and melting.
